Victorian Silverplate Fish Servers

Specific cutlery for serving and eating fish evolved in early 19th-century England. In 1838, a book of etiquette observed that “in first rate society, silver knives are now beginning to be used for fish: a very pleasing, as well as decided step in the progress of refinement.” People of means gradually set aside steel knives and forks, as carbon steel was said to react with the acids in fish and certain sauces, potentially affecting flavor. Fish knives and forks were sometimes referred to as “Fish Eaters,” while the larger serving implements were known as “Fish Servers.”
