First produced in 1938 in the south of France, Pernod was created when the ban on anise-based aperitifs was lifted in France. It followed a change in French laws which allowed an alcohol content up to 45% - thus the name Pernod 45.
During the austerity of WWII, French law prohibited the production and sale of beverages containing an alcohol content of more than 16%, which pulled Pernod 45 as well as many other brands, off the shelves. In 1951, that law was rescinded and the Pernod 45 brand changed its name and relaunched as Pastis 51 signifying the year it was once again allowed. Pastis 51 quickly became the legendary liquor company's leading brand and spirit.
From France, a wonderful glass water carafe produced exclusively as a promotional piece for use in cafés and bistros. This unique carafe has classic art deco lines and is decorated on one side with the name Pernod 45 and on the other side with Pastis 51 - the same iconic brand that had two names.

Pastis, (from pastisser or ‘to mix’ in Provençal French) is an anise-flavored alcohol-based aperitif which is synonymous with the south of France. Flavored with star anise, green anise, fennel, licorice roots and various other herbs (up to seventy total!), pastis was first produced in 1915 following the outlaw of absinthe. The drink was popularized and first marketed on a broad scale by Paul Ricard in Marseilles in 1932.
Pastis, much like absinthe, has a number of accoutrements and rituals associated with it. Alongside the glass of pastis, water is typically served in glass or ceramic carafes labeled with the pastis manufacturer's name and logo.
Pastis is best enjoyed on a hot summer's day in classic French style: one part pastis to five parts water with a bit of ice.
