Sauce boats (also called gravy boats) first began to be used in the late 17th century as dining reflected the growing influence of the French and their use of sauces. The name "sauce boat" is actually derived from the Old French "sausse" for sauce and "boat" relating to the shape of the piece.
Early sauce boats had double spouts and two handles (still often found in France today), but by the early 18th century, they had typically evolved into a single pouring lip and single handle. Some sauce boats were made with matching, or attached under-dishes and accompanying ladles.
Initially, sauce boats were supported by a central foot, but by the mid-1700s silver sauce boats supported by three feet increased in popularity. It was around this time that porcelain sauce boats were also introduced to compliment dinner services.
